Nutrition Data Collection of Underserved Communities

During my practicum I had the opportunity to shadow a research assistant working with the EFNEP under the USDA. This was conducted in many states to receive the most accurate and diverse results. One of the locations was the University of Maryland where we traveled to neighboring cities and collected data from locals. This study focused specifically on low-income minorities and how their diets related to chronic disease. There were two groups: a control and intervention group where the intervention group gained nutrition knowledge while also keeping their cultures in mind. I learned that many low-income minorities have trouble accessing the appropriate foods because of the grocery stores near-by but also because of time. Many of them worked long hours to make ends meet which led them to eat out a lot and sometimes skip meals. During this practicum it made me realize how lucky I am to consciously be able to think about what I am eating and when I’m eating as not everyone has that luxury. This study allowed researchers to adequately relate diet to chronic disease and if proper nutrition education will lead to prevention.
